Turkey Tips for Thanksgiving Leftovers

Turkey Brie Melt with Cranberry Sauce:

  • Use 1 left over whole grain roll, 2 ounces turkey breast, 1 ounce of brie cheese (thinly sliced), and 1 tablespoon cranberry sauce.  

Directions:
  • Split the roll in half. Divide the ingredients between the 2 roll halves and layer turkey first followed by brie. Heat up cranberry sauce in microwave. Place sandwich open-faced in toaster oven and cook until cheese is melted. 


Breaded Turkey Fingers:
  • 1/2 cup Fiber One Original cereal
  • 1 tablespoon grilling seasoning (or other seasoning of your choice)
  • 1 to 2 Egg whites
  • Cooking spray

Directions:
  • Preheat oven to 375 degrees. Use a blender to make breadcrumbs out of Fiber One Original cereal. Put bread crumbs in a shallow bowl. Beat egg whites and put them in another bowl. 
  • Dip turkey into egg whites then dip into breading. Place on a lightly sprayed cooking sheet.  Spray the tops of breaded turkey before putting in the oven. 
  • Cook for 10 minutes then flip pieces and spray again. Cook for another 10 minutes.

Other ways to use up left over turkey:
  • Omelet
  • Pizza with feta, onion, and olives 
  • Turkey   
  • Salad with fruit and cranberry sauce
  • Turkey and cheese enchilada or quesadilla
